How to Torte Your Cake and Prepare it for Decoration

So you want to make the perfect cake. Making a beautiful cake does not have to be difficult or stressful, especially if you have a few tricks up your sleeve. Here are some tips on what to do with your cake once you have taken it out of the oven to ensure that you have the best-looking cake to work with during the decorating process.

What does it mean to "Torte" a Cake?

So you have a recipe for a torte cake but you are not sure how to go about it. To torte a cake simply means that you will be slicing two cake layers in order to make four cake layers. A torte cake is in layers, and the in between the layers, a special icing or filling is inserted. A torte cake, besides being delicious, can also be very lovely to look at. However, it can be tricky to make a torte cake because it involves so many different steps. Here are some tips that you may find useful in torting your first cake.

Use a Cake Leveler To Torte Your Cake

Fortunately, it is now easier than ever to torte your own cake, thanks to a little kitchen device known as a cake leveler. You can purchase a cake leveler at your local cake decorating or kitchen supplies store. A cake leveler is a tool with two different posts with a thin wire that is attached to either pole. However, if you do not have a cake leveler, you can always use a knife. You will want to score the cake before you get ready to slice it in half. You can score the cake evenly all around using a knife, or you can score it by inserting toothpicks into the cake that can act as guiding posts.

Now for the Fun Part - After You Have Successfully Torte Your Cake

Once you have successfully torte your cake, you can really prepare the cake for decoration. Start by brushing away any lose crumbs. If you have the time, you will want to freeze the cake layers overnight. The best way to ensure that you have a good cake to work with is to freeze the layers. This will make them much easier to handle once it comes time to decorate them, and it will make it easier to work with because you will have many less crumbs to deal with.

Filling Your Torte Cake

Filling your torte cake can be one of the trickiest parts of the cake decorating process. To fill your torte cake, you will want to begin by piping a ring of your prepared icing around the top of the first layer (which is the bottom layer). You will probably have the best results by using a number 12 round tip. You will want to add this ring in order to prevent the filling from spilling out of the layers. Once you have made the ring, spread a layer of the filling, be it fruit preserves, pudding or fruit curds. Make sure not to spread the filling any higher than the well that you have made with the icing.

Icing Your Torte Cake

To ice your torte cake, begin by icing the sides of the cake. Then ice the top of the cake, using a generous amount of icing. Use a long, wide spatula for this part. Do not skimp on the icing, because you can always remove any excess icing with a leveler. Once you are done icing the cake, smooth over the top and the sides. If you want to achieve a smoother look, you can gently spray a little water from a spray bottle.
