Adjusting Size of Tiered Wedding Cake
If you find a wedding cake design that you absolutely have to have, but the cake is either too large or too small for your needs, it’s usually quite simple to adjust the size.
Increase or decrease tier sizes:
Any cake whose smallest tier measures 8″ or more in diameter can be modified for fewer servings simply by decreasing the size of each tier by 2″. For instance, if you have a three-tiered cake and the tiers on the cake you want measure 8″, 12″, and 16″, to decrease the amount of servings, you would decrease the sizes to 6″, 10″, and 14″. To increase the number of servings, you would go with 10″, 14″, 18″ tiers. Of course, there are always other options, such as making the cake two tiers instead of three, or four to increase the servings. You can change the cakes from round to square which also can make a difference in the number of servings. If you have a baker you should discuss this with him or her for the best choices to suit you.
There are charts available that give you the number of servings for the different sizes and shapes of cakes. You can find them on line or in cake decorating magazines.
