Color Techniques for Cake Icings

Color brings life to cake decorating!  Therefore, it is very important to learn how to tint icings in order to achieve different decorating effects.

  1. Begin with white icing and add color, a little at a time until you have the shade you are looking for.  If you use paste color, use a toothpick to add the color.  We recommend you tint a small amount of icing first, then add in the remainder of white icing until you get the color you need.  Colors may intensify or darken if you are using a buttercream icing, for up to two hours after mixing, so remember this when tinting your icing.  You can add extra color to deepen the color of your icing, but it’s not always as easy to lighten the color once it is tinted.  Use white-white icing color and be sure to use clear vanilla if you want to make your buttercream icing the purest snow-white!
  2. To make dark or deep colored icing, such as red or black, you may need a larger amount of icing color added to your icing.  The color should still be gradually added, but use a clean small spatula each time you add the coloring.  Most of these have no after-taste, even when using a larger amount; however, they can sometimes make your icing less stiff.  So we suggest if you are making red or black, or any color that requires a lot of coloring to be added, that you use a stiffer icing in order to keep the consistency you need.
  3. You should always be sure to mix enough of any one color of icing, because it is very difficult to get the exact same color if you have to mix more icing because you run out before you are finished decorating your cake.  So if you are decorating a cake with green vines and want to make the border the same color, be sure to make enough icing in that color to complete both.  The more you decorate and experiment with coloring icing, the more you will learn just how much of any one color icing you will need to complete a project.
